A Do-Good Dessert: Banana Pumpkin Mousse

Pumpkin is high in beta-carotene, potassium and fiber – all things that most of us need more of in our diet. Potassium is a key nutrient we need to keep blood pressure down; fiber helps with keeping our weight down, and beta-carotene has been shown to help keep our risk of certain cancers down. Are you ready to get down with pumpkin? Why not start with this delicious pumpkin mousse.

Makes 7 Servings  – Serving Size: ½ cup


1 large ripe banana – peeled, broken into chunks

8 oz extra firm tofu

15 oz canned pumpkin

2 ½ teaspoon cinnamon

¼ teaspoon ground ginger

¼ teaspoon nutmeg

1 tablespoon, 2 teaspoons agave nectar


Place banana in a food processor; process until smooth.  Add tofu; process until smooth.  Add remaining ingredients; process until smooth.  Spoon mixture into individual bowls or one large bowl and refrigerate.
