Chilled Avocado, Asparagus & Spinach Soup

First and foremost, avocados are soft and in addition to their ideal texture, they are chockfull of healthy monounsaturated fat, fiber, potassium, and folate. Many parents want to try other healthy green foods with their babies but are afraid. Well, moms, here is a solution for you! This soup is creamy, yummy and will gear your baby up for healthy eating habits later in life. Enjoy this as a family with some whole grain rolls (for the adults only of course) for dipping.

Makes 5 Servings – Serving Size: 1 cup


2 avocado – peeled and pitted (about 12 ounces)

2 cups water

2 cups asparagus – chopped, woody bottoms removed

2 tablespoon celery – peeled, chopped

4 teaspoon lite soy sauce

2 tablespoon lemon juice

1 teaspoon green onions – chopped

1 teaspoon fresh garlic – minced

¼ teaspoon dried thyme

1 ½ teaspoon fresh tarragon – chopped, stems removed

1 ½ cups fresh spinach – packed

Pinch cayenne pepper

½ teaspoon salt

Freshly ground pepper, to taste


Combine all ingredients in a tall pot or deep mixing bowl and purée with a vertical stick blender until smooth; or place all ingredients in a blender and blend until a smooth purée.
