Immunity-Boosting Squished Squash

Butternut squashRemember all the wonderful foods from your childhood? Chances are, a lot of those memories may not include healthy food choices (think full-fat mac and cheese, ice cream and fried chicken fingers). Here is one recipe that is sure to please your child (or the child in you) that is full of yummy healthy ingredients! The butternut squash, high in carotenoids, may help your little one fight off a cold from other kids at daycare or school too! That’s because these magical carotenoids, high in vitamin A, may help to increase our immune function. Hello squished squash – goodbye stuffy nose!

Makes 8 Servings –  Serving Size: ½ cup


1.5 lbs butternut squash, peeled, seeded, medium dice

1 large Fuji apple, medium dice

2 tablespoon golden raisins

½ cup orange juice


In mixing bowl, combine all ingredients and place into a 9×9 inch glass baking pan, cover with foil and bake at 375 degrees for 45 minutes. Remove from oven, uncover, pour into mixing bowl and mash with hand masher until mashed but chunky.
