Weight-loss Recipe: Apple Pear Jicama Waldorf Salad

We all know that an apple a day keeps the doctor away, but did you also know that an apple a a day can keep the yet-another-pants-size away as well? It’s true! Apples are wonder food when it comes to dropping pounds! A 2003 study  in the journal Nutrition found that women who consumed either three apples or three pears a day were more likely to lose weight and have better blood sugar control. As an added bonus, many studies have linked apple consumption to a longer lifespan, as well as reductions in the risk of breast cancer and stroke. Lifestyle 180 Apple Pear Jicama Waldorf Salad

Ingredients 

Makes 20 (1/2 cup) servings

3 Fuji apples

½ cup walnuts – chopped and toasted

3 pears – variety of colors

2 cups red grapes

1 lb jicama

¼ cup unsalted sunflower seeds

½ cup raisins – red or yellow

12 oz non-dairy mayonnaise

½ cup almonds – sliced and toasted

2 cups unsweetened pineapple juice (used to prevent pears, jicama and apples from browning)

Directions

Peel the jicama. As you small dice the jicama, place in a bowl with pineapple juice to prevent browning, about 2 minutes. Drain the jicama, reserving the liquid to be used for the other fruit.

Wash and small dice the apples, placing them in a bowl using the reserved pineapple juice to prevent browning, about 2 minutes. Drain the apples, reserving the liquid.

Wash pears and small dice, placing in a bowl with pineapple juice to prevent browning.  Let the pears soak in the pineapple juice while you wash and cut the grapes in half.  Drain the pears, reserving the liquids. In a large bowl, combine and mix all the ingredients. Enjoy!
