Zinfandel Chia Onions

Chopped red onionsEven though they’ll make cry, onions are a great source of nutrients! They contain about a quarter of our recommended daily intake of vitamin C and they even have a little bit of fiber too! Onions are versatile when it comes to using them in different dishes, and they especially work well in this recipe! You can use them this summer in several different ways! Instead of putting cheese on a turkey burger, use the onions! Making an omelet? Throw some of onions in the pan or, just keep it simple by adding them to a cold salad or chopped and mixed in tabbouleh! So grab a glass of Zin tonight, and keep the bottle open for this delicious sweet onion treat!

Makes 2 Servings – Serving Size: ½ cup

1 cup red onion, sliced
1 tsp extra virgin olive oil
1 ½ tsp agave nectar
4 tbsp zinfandel
½ tsp chia seed

Heat oil in sauté pan; add onions and sauté until tender.

Add agave nectar and sauté until lightly caramelized. Add zinfandel and chia seed reduce until syrupy consistency.
