Grilled cheese is the ultimate comfort food – bread, cheese, butter and, unfortunately, lots of fat and calories. This lighter version allows you to customize the sandwich and make it your own, with healthier substitutions like apples and olive oil.Ingredients
Makes 1 serving
2 slices whole-wheat sourdough bread (or your favorite healthy bread)
3 thin slices reduced-fat provolone (or your favorite cheese)
2 slices Fuji apple
Olive oil for spraying and brushing
Freshly ground pepper
Heat a cast iron pan on medium-high heat. Spray or brush both sides of the bread with a little olive oil and toast bread slices briefly on one side in hot pan. Flip one slice of bread over and top with a slice of cheese, apples and the rest of the cheese. Finish with the second slice of bread with the toasted side on the inside. Press down on the sandwich with a spatula until nicely browned. Flip over and repeat pressing down for another minute. Carefully remove sandwich from pan, cut in half and serve.
