Chopped Spinach and Sour Cherry Side Dish

It’s summer, which means you might want to skip turning on the over to roast your veggies. Skip the over in favor of this dish which only takes a few minutes over heat. Plus, it’s since it utilizes dry sour cherries, you can make this any time of year. This tasty, nutrition packed powerhouse of a side dish takes only minutes to make and will be devoured in even less time – I guarantee it.

Ingredients:
1 tsp olive oil
20 oz. frozen organic chopped spinach, defrosted
1/2 cup dried sour cherries
1/4 cup toasted pine nuts

Directions:

In a medium saucepan warm the olive oil, add the spinach and cherries and cook stirring until just heated through. Serve sprinkled with pine nuts.

Yield: 4 servings
