Morning Spinach Frittata

I just love breakfast foods. This dish can be a satisfying and healthy breakfast, plus you can use the leftovers, cold or reheated for a mid morning snack or even as an addition to a lunch salad, served on the side. It’s important that you squeeze the spinach quite dry so it doesn’t “bleed” into the eggs. That’s why I use frozen-thawed spinach as opposed to fresh. Get the recipe here.
