Pesto With a Pistachio Twist

Pesto isn’t just for pasta anymore. Try this delicious pesto on top of vegetables and proteins such as grilled chicken or shrimp. Skipping pasta? Pair this pesto with spaghetti squash – low fat, low carb and delicious! Pesto is a fan fave when it comes to sauces. This pesto uses pistachios instead of pine nuts for a twist! Its pure flavor, plus the flaxseed, gives the pesto an omega-3 boost to keep your mind sharp.

Makes 1 cup, or 8 servings (Serving size 2 tbsp)

1 cup packed basil leaves and tender stems, well washed and dried
1/3 cup extra virgin olive oil
3 cloves garlic, chopped
1/4 cup grated Parmesan
1/2 cup unsalted shelled pistachios
1/4 cup ground flaxseed

Purée all ingredients in a food processor and serve as you like. Serve over pasta or fish, or even as a crostini topping. Get creative!
