Raspberry Ice Cream Reboot


As summer heat swells, you might be looking for a frosty treat that won’t bust your gut. This is a quick and delicious dessert that blends up into a soft-serve ice-cream consistency. It is perfect as a last-minute dessert for company, but you can also make it ahead of time and serve as a lovely raspberry cream.

Makes about 4 cups

1 1/2 cups ricotta cheese
1 12 oz. bag frozen raspberries
2 very ripe bananas

Combine all ingredients in a food processor or blender and process until smooth and creamy. Serve immediately as ice cream or save for later as a delicate cream.
